Here they are! All offical shortcuts!
I hope I did not forget one. If somebody has found other shortcuts, please post them!! :D

FLORION HEIGHT

CUBISS FLOAT

1fo - you have to open a hidden shortcut here with a proton cannon, missile or rockets. this shortcut is in front of the part with the declivity on the left side. It's bright blue colored and you can see that it's not really a part of the side panel click - it's at the end of this straight line! 1re - after the tunnel, take the right way
2fo - 1) after the ice tunnel there's a ramp that is sometimes available - still don't know how to activate this one 2) before you fly into this big, glass hall/tunnel there is a part of the track which is very wide, with buildings on the right side. Fly near to the right side, there's a yellow trigger pad. Fly over this one and it will open a 2nd way into the hall and close the old one. It's alot shorter 3) you have to open a hidden shortcut here with a proton cannon, missile or rockets. this shortcut is in front of the part with the declivity on the left side. 2re - 1) take the right way after the tunnel. 2) take the left way in the glass hall. 3) when you exit the hall take the way straight on, not the left way.
3fo - when you're in this track section between these high ice walls that goes uphill at first and then down alot, there's again a hidden shortcut like in Cubiss Float 1forward. Before the track makes a right turn there's again this bright blue part of the side panel.

MANDRASHEE

ALCA VEXUS

2fo - When you fly into the big temple with the lion head at the entrance and the flames in it, there's a yellow trigger pad at the left side that opens the left way and closes the right one while flying over.
2re - take the left way after the transparent bridge thats surrounded by the looping of the 3rd track. click! (http://ps2media.ign.com/media/previews2/image/wipeout/wipeout_7.jpg)
3fo - 1) After the waterfall and the next right curve there's a ramp marked with a glaring "TURBO JUMP". Take this short cut just with a turbo at the lower speed classes, later mostly with the faster ships or with a turbo as well. 2) After the TURBO JUMP it comes a section with two water falls on the left. VOHL SQUARE

1fo - After the tunnel, at the circle: don't take the 1st way, take the 2nd after the 1st one, it's a lot shorter
1re - After many curves and turnes there is part where the track splits into two ways. Take the left one.
2fo - 1) After the 1st 90° turn fly straight on. The next right turn has red arrows at the left. You can fly under these arrows und cut the track [turbo is needed in lower classes] 2) Before the big jump and all these turnes theres a small crevice on the track. Brake hard here and let the craft fall into this crevice. You're now in a lower track section that is filled with many many speed pads!!

3fo - 1) After the start and the ramp you're at this wide section of the track. In the middle of this section there are big pillars with walls between. You can destroy the 2nd wall between these pillars with a proton cannon, a missile or rockets. The speed pads under that wall makes this short cut to a fast experience. this section - click! 3re - take the right one of the two ways when you come into the tunnel.


TEMTESH BAY

2fo - 1) try to make a system how to fly trough the mines. I really can'r describe which way I use 2) same as in 1forward

KATMODA 12

1fo - fly over the orange flip pad - it will take you to the track above

2fo - 1) fly over the orange flip pad - it will take you to the track above 2) before you fly into the tunnel there's a yellow trigger pad on the left side. When you enter the tunnel a big door at the right side is opened now for a short time
2re - /
3fo - 1) take the right way when the track splits [I'm not sure here] 2) when you're at the 1st flip pad: don't use it, the track above is longer [I'm not sure here] 3) at the 2nd flip pad: don't use it, the normal track has much more speed pads - so it's much faster
3re - at the end the track splits, take the left way [I'm not sure here]

cheers just what i was looking for, just picked up a ps2 for 15 second hand from store with a game free, so picked fusion up, first time i played it its diffrent, but i like some features,

I always use the shortcut, BUT I WENT THROUGH THE DOOR WITHOUT HITTING THE SWITCH. SO IT'S LIKE THE SHORTCUT IS COMPLETELY OPEN AT ALL TIMES.

Same for Alca Vexus 2 forward
