I'm wondering if the tracks stored in the N64 cartridge are in a similar format to what is used in Wipeout 1 / 2097 on PS1.
Those two games store tracks inside files with TRV (vertices), TRS (sections), TRF (faces) and VEW (view) extension. Textures are stored inside LIBRARY files.
I wanted to take a look at the N64 rom but don't know where to start.
EDIT: this screenshot (https://wipeout.fandom.com/wiki/Qoron_IV?file=Unity_2019-03-07_23-12-37.png) show Qoron IV in Unity (from Aybe), so this has definitely been done.
EDIT2: here (https://www.wipeoutzone.com/forum/showthread.php?8897-Extracting-WipEout-3D-models-(large-images-allowed)&p=249718#post249718) is relevant post
